Oscar and Francisca Chacón have been processing coffee at their famous Las Lajas Micromill in the Central Valley of Costa Rica for two decades now, and that experience really shines through in this coffee. Sourced from Finca Mirella, this coffee is processed using the Perla Negra method. In this process, a carefully chosen portion of the lot is first dried on raised beds in the sun for a few days. Afterward, it is transferred to the shade and then to a greenhouse. Here, the coffee is slowly dried and moved by hand, taking approximately 22-30 days.
It's a slow and careful process, but it results in a rich flavor that really shines through in the cup. It features a pomegranate note similar to Grenadine, floral highlights of orange blossom, and a wildflower honey sweetness.
